Growing up in Ireland I spent a huge amount of time in County Mayo at my family's cottage in the rugged 'West of Ireland', where I was surrounded by nature and farming. This is where my love of animals and the outdoors was nurtured, and grew into a lifelong appreciation for animals, nature, and small local and ethical farms.

Living in Red Hook NY, I finally got the opportunity to cultivate my own land here in the bountiful Hudson Valley. With my two children in tow, I now raise a small flock of 90 chickens including rare breeds and Heritage birds. My small batch rainbow-colored eggs with their distinctive packaging and presentation are available locally as well as being shipped to individuals nationwide. These eggs are not just beautiful; they’re non-GMO, pasture raised, and beyond humane. Sought after by award winning local Michelin Chefs, and home cooks alike.

I put a lot of time and thought into breed selection and the wellness and vitality of my birds, as well as my packaging and presentation - the intention behind this is that I want my customers to open their carton of eggs and take pause. I want people to be taken aback by how beautiful these cartons of eggs are - and then perhaps in turn realize that an egg is not "just" an egg... It's far more than just a humble ingredient. It is a perfect food. It is a valuable food. I want this pause to encourage more of a connection to our food, its value, and its story. To know where your food comes from, to truly know where it comes from is a gift we all deserve to be connected to in our communities. Small producers really matter. 

Chickens are one of the most abused and mistreated animals in the world. In my little corner of the world I'm doing everything I possibly can to give my chickens the best life they can have, and deserve to have. The Chicks Next Door eggs are as humane and ethical as eggs can be - our flock has full and free access to pasture every single day, and when a hen slows / stops laying eggs (around 2 - 3 years old) she will live out her peaceful and well earned retirement here on my land.

Because of customers like you The Chicks Next Door is able to donate approximately ten dozen eggs every month to the local charitable organization; Red Hook Responds. The Chicks Next Door is also a proud partner of ‘Heifer International’ - working to empower, educate, and uplift women in 21 different countries in the field of farming and agriculture. Small scale agriculture, farming, and animal husbandry has the power to truly reconnect us to our food, ourselves & our families, as well as strengthening the community around us. The Chicks Next Door is also a proud member of The Red Hook Chamber of Commerce, and The American Poultry Association.
